Milk Kefir Flavoring
Flavoring & Second Fermentation - Milk Kefir
Plain kefir is tangy and creamy. It may be consumed as it is or added to recipes in place of milk or buttermilk. If you'd prefer a flavored end product, now is the time to add fruit, honey or other flavorings.
The easiest way to flavor your milk kefir is to make a simple smoothie. Add fresh or frozen fruit to your kefir and blend.
Try:
Berries, honey, banana, peaches & any other goodies you can think of. Stick with sweet fruits and avoid overly acid citrus.
Second Fermentation
A second fermentation may be used to change the texture of kefir. A second fermentation can cause another separation of the kefir from the whey making it thicker for making spreadable cheese.
Return the kefir to the glass jar and allow it to remain at room temperature for up to another 24 hours or until you are satisfied with the texture.
To thicken for cheese, place a coffee filter in strainer. Gently, pour off any whey that has separated then pour the remaining kefir in the filter. Allow the whey to continue to drain until remaining kefir is thick for spreading.
Try: add olive oil, fresh herbs, herbs d'provance, garlic, shredded cheese for a tasty spread for bread and crackers.
