What is kefir?

Milk kefir is a fermented milk drink. Milk or water are inoculated with beneficial bacteria and yeasts to create a tangy fermented end product.

Kefir "grains" are a SCOBY. A Symbiotic Colony Of Bacteria & Yeasts.   They come in two types and differ greatly in the way they look and they end product they produce.

 

Milk kefir grains feed on the lactose in milk.  When you place them in milk you are feeding them while at the same time, they are inoculating the milk with beneficial bacteria and yeasts.

 

Water kefir grains feed on sucrose contained in sugar. Just like milk kefir, they are feeding while inoculating the water.  The fermentation process of water kefir produces a naturally carbonated beverage.

 

Making kefir at home is not difficult and can be easily mastered with my instructions and a little intuition.

 

It's all about the 3 T's.  Taste, Time, Temperature.   By making subtle adjustments in these 3 T's, you too can master making kefir at home.
